You probably need 3-400 grams for a good meal for two hungry folk. Whisk the eggs and mix together in a bowl, knead well until the dough becomes smooth – it’s 5 minutes or more of hard work, but you’ll see the texture start to become silky and smooth. Wrap in cling film and leave in the fridge for half an hour.
Take it out, thin it out a bit and pass it through your pasta machine a few times for a bit more kneading and roll into whatever takes your fancy.
